Safflower (Carthamus tinctorius) plant is a member of the sunflower family. Safflower plant is a 30 to 16cm tall plant with bright yellow and globular flower heads that bloom in the month of July. Safflower oil is a form of oil that is taken out from the seeds of the safflower plant, which is becoming accepted among people who are conscious about their health. Safflower oil has the richest source of polyunsaturated fats than that found in other types of vegetable oil. Safflower oil also contains 13 percent of monounsaturated fatty acids (oleic acid) and only 8% of saturated fatty acids. The other essential nutrients present in safflower oil are omega-6 fatty acids, cis-linoleic acid, vitamin E, etc. Safflower oil can also be used as cooking oil or as a dressing in salads.

Functions of Safflower Oil:

Safflower oil has some essential nutrients such as omega-6 fatty acids, cis-linoleic acid and vitamin E.
